Why Fruit Flattens a Wet Dough
Count the juice. Change how you add the berries.
The loaf goes flat from wet fruit mixed in early — not from “too much water,” and not because 10 g of sugar needed a longer ferment. Treat blueberries as an inclusion. Count their juice in the water. Do not treat flour type as the reason the loaf collapsed.
The short version
This is the contrast: a wet pan loaf with no fruit still had height. Hydration on the flour was not the collapse. The loaf went flat when fresh blueberries went in at mix, extra dough water rode along, and the rise was stretched because “sugar absorbs water.”

Hydration is on the flour
Baker’s percentage counts water against flour only. Fruit juice is not that water. A dough that is already wet can still have height if the gluten film stays intact — a pan loaf with no fruit already showed that.

What a lean dough does not have: wet fruit in the first mix. High hydration makes a slack, extensible film. That film still holds gas if it stays intact. Fruit juice is free liquid the flour never bound — it sits in the film, thins it, and then the skins punch holes in it.
What wet fruit actually does
Raw blueberries are about 84% water and about 10% sugar (USDA FoodData Central, SR Legacy FDC 171711). That water is juice, not baker’s-percentage water. A handful on a 450 g loaf can push effective hydration into the mid-90s once the berries burst.
Mixed at autolyse or first mix, fruit does three things a lean dough never does:
- Adds water the flour never bound. Flour binds dough water over time. Berry juice is free liquid in the gluten film. The dough gets wetter, not tighter.
- Cuts the web. Skins and burst fruit puncture the gluten film. Mixer friction makes this worse.
- Speeds the clock. Fruit sugar plus a little formula sugar feed the microbes. Acid from the fruit weakens gluten further. A slack dough overproofs and collapses.
Bakers who publish blueberry sourdough say the same thing in practice: dry the fruit, add it late (after the dough has elasticity), and do not treat leaked juice as “more hydration you meant to add.”
Two kinds of sugar — two clocks
Your teacher is right about high-sugar dough. Sugar is hygroscopic. It competes with flour for water, gluten develops slower, and at high doses yeast slows from osmotic stress. Milk bread, brioche, and panettone take longer for that reason.
Dose decides the direction:

A Classic loaf with 10 g sugar on 262 g flour is about 3.8%. That sits in the feed band. The bake planner uses the same split: under ~5% slightly faster, over ~10% slower. If you gave that blueberry loaf extra time because of the sugar rule, that is a strong reason it went flat.
Next bake — same loaf, keep the berries
- Mix to the hydration you want on the flour. Do not add extra dough water “for the berries.” Hold back 10–15 g and only splash it if the dough feels tight after a rest. For a 450 g loaf with fresh berries, mix around 60% water if you want the juice to finish the dough near 75%.
- Build gluten first. Autolyse, folds, full extensibility — the lean dough you already know how to make.
- Add fruit late. End of bulk or during shape. Pat dry, toss in a spoon of flour. Frozen berries smear less than fresh.
- Stay in a loaf pan. Do not bake a fruit dough freeform. The pan is the walls the gluten no longer has.
- Bake on dome + jiggle, earlier than a lean class loaf. Fruit sugar shortens the window. The clock is a guess; the pan is the test. See Artisan vs Sandwich: Proofing Tests.
When the teacher’s rule applies
Use the longer ferment when sugar itself is high and the dough feels tighter — milk bread, brioche, 10–15% sweetener. Do not use it when the extra sugar arrived as juice.
